Time is the key ingredient. Our doughs are allowed to slowly ferment using entirely natural processes to develop irresistible flavour and superb texture. The resulting loaf is more nutritious, more easily digestible and has a long natural shelf life – if you can resist eating them first.
All our loaves are hand crafted using entirely natural ingredients with no additives whatsoever.
We only use the finest flours, water, salt, and occasionally a small amount of yeast, not forgetting of course the occasional handful of nuts, seeds, olives and fruit as we see fit.
Our sourdoughs are made with a natural leaven cultivated entirely from wild yeasts present in the flour and in our slow doughs, we add a little yeast as well. All our loaves are hand shaped and left to prove overnight in a carefully cooled environment as mother nature and technology work quietly in tandem as we sleep, to provide bread ready for baking and delivery early the following morning.
Not only does this routine gently coax wonderful flavours from our ingredients, it also allows us as bakers to work to a normal happier daily routine and of course happy bakers bake happy bread. Download Price list
